  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon fine salt
  • Pinch of black pepper
  • Fresh chives, roughly chopped (optional, for garnish)

Instructions

  1. Prepare the Baking Pan:
    • Lightly mist a silicone muffin pan with cooking spray. Preheat the oven to 350°F (175°C).
  2. Blend the Ingredients:
    • In a blender, combine eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth to create a fine, even batter.
  3. Fill the Muffin Cups:
    • Divide the egg mixture evenly among the muffin cups, filling each about halfway.
    • Sprinkle with chopped chives or any additional mix-ins like vegetables or bacon at this stage.
  4. Bake:
    • Place the pan in the oven and bake for 20–22 minutes, or until the egg bites are slightly firm to the touch.
    • Remove from the oven and let the egg bites cool for a few minutes. They may puff up during baking but will settle as they cool.
