- 1 pound Italian sausage, casing removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups butternut squash, peeled and cubed
- 1 teaspoon dried thyme
- 1/2 teaspoon ground sage
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup heavy cream
- 1 package (9 oz) cheese tortellini
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook Sausage: Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Sauté Aromatics: Add diced onion and minced garlic to the pot. Sauté for about 3 minutes, or until the onion becomes translucent.
- Simmer the Base: Pour in chicken broth and bring to a boil. Add butternut squash, thyme, sage, and crushed red pepper flakes. Reduce the heat and simmer for 15–20 minutes until the squash is tender.
- Blend the Soup: Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches with a traditional blender.
- Add Cream and Tortellini: Stir in heavy cream and tortellini. Cook for 5–7 minutes, or until the tortellini is tender.
- Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve warm.
