- 1 pound ground beef (extra lean preferred)
- 1 teaspoon chili powder
- 1 teaspoon ground chipotle chili pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cayenne pepper (optional)
- 1 tablespoon tomato paste
- 2 tablespoons unsalted beef stock/broth (low sodium or regular)
- 12 ounces shredded cheese blend (about 3 cups; cheddar, Monterey Jack, pizza mozzarella)
- 6 flour tortillas (7 to 8 inches in diameter)
- 2 tablespoons vegetable oil (for greasing the pan)

Instructions
- Prepare the Ground Beef:
- Heat olive oil in a large non-stick frying pan over medium heat.
- Add ground beef, chili powder, chipotle pepper, oregano, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Cook, breaking the beef into small pieces, until fully browned (about 8–10 minutes).
- Add Tomato Paste and Stock:
- Stir in tomato paste and beef stock. Cook for another 1–2 minutes.
- Remove from heat and drain excess grease if necessary.
- Assemble Quesadillas:
- Distribute 8 ounces (2 cups) of cheese on one half of each tortilla.
- Add cooked beef over the cheese, then top with the remaining cheese.
- Fold tortillas into half-moon shapes.
- Cook Quesadillas:
- Heat 2 teaspoons of vegetable oil in a large non-stick frying pan over medium-low heat.
- Cook quesadillas in batches (2 at a time) for about 2 minutes per side, or until golden brown and crispy.
- Transfer cooked quesadillas to a preheated 200°F oven to keep warm.
- Serve:
- Cut each quesadilla into halves, creating 12 pieces in total. Serve with salsa, guacamole, and/or sour cream. Enjoy!
