    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper
    • 1/4 teaspoon ground cayenne pepper (optional)
    • 1 tablespoon tomato paste
    • 2 tablespoons unsalted beef stock/broth (low sodium or regular)
    • 12 ounces shredded cheese blend (about 3 cups; cheddar, Monterey Jack, pizza mozzarella)
    • 6 flour tortillas (7 to 8 inches in diameter)
    • 2 tablespoons vegetable oil (for greasing the pan)

Instructions

  1. Prepare the Ground Beef:
    • Heat olive oil in a large non-stick frying pan over medium heat.
    • Add ground beef, chili powder, chipotle pepper, oregano, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
    • Cook, breaking the beef into small pieces, until fully browned (about 8–10 minutes).
  2. Add Tomato Paste and Stock:
    • Stir in tomato paste and beef stock. Cook for another 1–2 minutes.
    • Remove from heat and drain excess grease if necessary.
  3. Assemble Quesadillas:
    • Distribute 8 ounces (2 cups) of cheese on one half of each tortilla.
    • Add cooked beef over the cheese, then top with the remaining cheese.
    • Fold tortillas into half-moon shapes.
  4. Cook Quesadillas:
    • Heat 2 teaspoons of vegetable oil in a large non-stick frying pan over medium-low heat.
    • Cook quesadillas in batches (2 at a time) for about 2 minutes per side, or until golden brown and crispy.
    • Transfer cooked quesadillas to a preheated 200°F oven to keep warm.
  5. Serve:
    • Cut each quesadilla into halves, creating 12 pieces in total. Serve with salsa, guacamole, and/or sour cream. Enjoy!
