  • 1 1/2 pounds boneless, skinless chicken breasts
  • 3/4 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 2 tablespoons unsalted butter
  • 1 lemon, thinly sliced
  • 1 cup orzo pasta
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 3 cups low-sodium chicken broth
  • 2 cups chopped kale
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Sear the Chicken:
    • Heat olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat. Season the chicken with ½ teaspoon salt and ¼ teaspoon black pepper.
    • Sear the chicken for 3–5 minutes on each side until golden brown. Transfer to a plate and set aside.
  3. Prepare the Lemon and Orzo:
    • Add butter to the skillet and cook the lemon slices until golden, about 1 minute per side. Transfer the lemons to the plate with the chicken.
    • Add the orzo and garlic to the skillet. Sauté for 2–3 minutes until the garlic is fragrant and the orzo is lightly toasted.
  4. Add Liquids and Greens:
    • Pour in the wine and cook, stirring constantly, until mostly absorbed (about 1 minute).
    • Stir in the chicken broth, kale, capers, remaining salt, and black pepper. Bring to a boil.
  5. Bake the Casserole:
    • Nestle the chicken and lemon slices back into the skillet, ensuring they are evenly distributed. Transfer the skillet to the oven and bake uncovered for about 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the orzo is tender.
  6. Garnish and Serve:
    • Sprinkle fresh parsley over the casserole before serving. Enjoy hot!
