- 6 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or Herbes de Provence)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 2 shallots, thinly sliced
- 1 1/2 cups cherry tomatoes
- 1/2 cup green or black olives
- 1 cup dry white wine
- Optional: 4 pitted dates, chopped
Instructions
- Season the Chicken:
- Pat chicken thighs dry and season with salt, pepper, and thyme.
- Sear the Chicken:
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
- Sear the chicken thighs, skin-side down, until golden brown, about 5 minutes. Flip and cook for another 3–4 minutes. Remove from the skillet and set aside.
- Sauté Aromatics:
- In the same skillet, reduce heat to medium and add garlic and shallots. Cook until softened, about 2 minutes.
- Add Vegetables and Wine:
- Stir in cherry tomatoes, olives, and chopped dates (if using). Pour in white wine and stir to combine.
- Braise the Chicken:
- Nestle the chicken thighs back into the skillet, skin-side up. Cover and simmer over medium-low heat for 30–35 minutes, or until the chicken is tender and cooked through.
- Serve:
- Remove from heat and serve hot with crusty bread, rice, or a green salad. Garnish with fresh parsley if desired.
