Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or Herbes de Provence)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 shallots, thinly sliced
  • 1 1/2 cups cherry tomatoes
  • 1/2 cup green or black olives
  • 1 cup dry white wine
  • Optional: 4 pitted dates, chopped

Instructions

  1. Season the Chicken:
    • Pat chicken thighs dry and season with salt, pepper, and thyme.
  2. Sear the Chicken:
    • Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
    • Sear the chicken thighs, skin-side down, until golden brown, about 5 minutes. Flip and cook for another 3–4 minutes. Remove from the skillet and set aside.
  3. Sauté Aromatics:
    • In the same skillet, reduce heat to medium and add garlic and shallots. Cook until softened, about 2 minutes.
  4. Add Vegetables and Wine:
    • Stir in cherry tomatoes, olives, and chopped dates (if using). Pour in white wine and stir to combine.
  5. Braise the Chicken:
    • Nestle the chicken thighs back into the skillet, skin-side up. Cover and simmer over medium-low heat for 30–35 minutes, or until the chicken is tender and cooked through.
  6. Serve:
    • Remove from heat and serve hot with crusty bread, rice, or a green salad. Garnish with fresh parsley if desired.
