  • 1 onion, chopped
  • 3 large carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup coconut milk (optional, for creaminess)
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the carrots and potatoes, stirring occasionally, and cook for 5 minutes.
  3. Pour in the vegetable broth and add cumin, smoked paprika, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the carrots and potatoes are tender.
  5. Remove the pot from heat and use an immersion blender to purée the soup until smooth. Alternatively, blend the soup in batches using a regular blender.
  6. Stir in coconut milk, if using, and adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.
