- 200g (7 oz) streaky bacon, chopped
- 2 medium courgettes (zucchini), sliced
- 2 cloves garlic, minced
- 200ml (7 fl oz) double cream
- 100g (3.5 oz) grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta according to package instructions, drain, and set aside.
- In a large frying pan, cook the chopped bacon over medium heat until crispy, about 5-6 minutes. Remove and set aside.
- Using the same pan, sauté the minced garlic for 1-2 minutes until fragrant.
- Add the sliced courgettes to the pan and cook for about 5 minutes, stirring occasionally until tender.
- Lower the heat and pour in the double cream, stirring until heated through.
- Mix in the grated Parmesan cheese and stir until the sauce becomes smooth and creamy.
- Season with salt and pepper to taste.
- Combine the cooked pasta with the creamy courgette and bacon sauce, stirring to coat evenly.
- Garnish with fresh basil or parsley and serve immediately.
