For the Candied Bacon:

  • 6 strips of candied bacon (optional)

For the Soup:

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1/2 red onion, chopped (substitute with yellow onion if desired)
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning (homemade or store-bought)
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 4 tablespoons organic all-purpose flour
  • 5 cups organic chicken stock or broth
  • 1 cup organic heavy cream (sub with full-fat coconut cream/milk for vegan)
  • 3 tablespoons white cooking wine (or dry white wine)
  • 89 lasagna noodles, broken into small pieces
  • 2 cups cooked, shredded organic chicken breasts
  • 1 1/2 cups freshly-grated mozzarella cheese
  • 1 cup freshly-grated Parmesan cheese
  • 2 cups chopped kale

Instructions

  1. Prepare the Candied Bacon (Optional):
    • Bake bacon strips until caramelized and golden brown. Let them cool before chopping into small pieces.
  2. Prepare the Soup:
    • In a large pot or Dutch oven over medium-high heat, heat olive oil and butter. Add minced garlic and chopped onions; sauté until fragrant and translucent (1-2 minutes).
    • Stir in Italian seasoning, salt, black pepper, smoked paprika, and garlic powder. Add flour and mix until combined.
    • Gradually add chicken stock and white wine, stirring frequently to avoid lumps, until the mixture thickens.
    • Pour in heavy cream, then add kale, lasagna noodles, and shredded chicken. Let the soup simmer for 15-20 minutes until the noodles are tender.
    • Stir in grated mozzarella and Parmesan until melted and creamy.
    • Remove from heat and serve immediately. Top with candied bacon and enjoy with a side of bread if desired.
