  • 1 lb (450g) sirloin steak, cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season steak cubes with salt and pepper, then sear in the skillet for 2-3 minutes per side until browned and cooked to your liking. Remove and set aside.
  3. Lower heat to medium and add butter to the skillet. Once melted, stir in garlic and thyme. Cook for 1-2 minutes until fragrant.
  4. Pour in beef broth and simmer for about 3 minutes to reduce slightly.
  5. Add heavy cream and Parmesan cheese, whisking until smooth and creamy. Simmer for another 2-3 minutes.
  6. Return steak bites to the skillet, tossing to coat them in the sauce.
  7. Garnish with parsley and serve immediately.
