Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 1 celery stalk, chopped
  • 1 medium zucchini, chopped
  • 1 small head of cabbage, shredded
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables soften.
  2. Add zucchini and shredded cabbage. Cook for another 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes (with juice), vegetable broth, thyme, basil, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer for 25-30 minutes, or until vegetables are tender and flavors meld together.
  5. Taste and adjust seasoning as needed.
  6. Remove from heat and stir in fresh parsley if desired before serving.
