It’s perfect as a side dish or meal prep item, offering bold umami flavors and a vibrant touch to your dining table.

- 1.5 lb Fresh Spinach (with stems)
- 4 cloves Garlic, minced
- 3 tbsp Soy Sauce
- 3.5 tbsp Sesame Oil
- 1 stalk Green Onion, chopped
- 2 tbsp Sesame Seeds, crushed
- 1 tsp Sugar
- 0.5 tbsp Korean Red Chili Flakes
- 0.5 tbsp Korean Chili Paste
Instructions
- Prepare the Spinach:
- Cut off the stems and rinse the spinach thoroughly. Drain and set aside.
- Blanching:
- Boil water in a pot with 1 tsp of salt.
- Add the spinach and blanch for 30 seconds.
- Rinse with cold water to stop the cooking process and squeeze out excess water.
- Divide and Portion:
- Form the blanched spinach into two equal portions for the savory and spicy variations.
- Savory Version:
- Combine 2 cloves of minced garlic, 2 tbsp soy sauce, 2 tbsp sesame oil, 1 tbsp crushed sesame seeds, and half of the chopped green onion in a bowl.
- Add one portion of spinach and mix thoroughly. Adjust seasoning if needed.
- Spicy Version:
- Mix 2 cloves of minced garlic, 2 tbsp soy sauce, 2 tbsp sesame oil, 1 tbsp crushed sesame seeds, 0.5 tbsp Korean red chili flakes, 0.5 tbsp Korean chili paste, 1 tsp sugar, and the remaining green onion in a bowl.
- Add the second portion of spinach and mix well.
- Serve:
- Serve immediately or refrigerate for later use. This dish can be enjoyed warm or chilled.
