Ingredients

Units Scale
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms (such as cremini or button), sliced
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1/2 cup sour cream
  • 1 tablespoon flour
  • Salt and pepper to taste

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing for about 3 minutes until softened and fragrant.

  6. Serve in bowls, garnished with fresh parsley. Enjoy warm with crusty bread.
