- Pasta: 12 ounces penne pasta
- Sausage: 1 pound Italian sausage
- Vegetables and Aromatics:
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- Sauce Ingredients:
- 1 cup ground tomatoes
- 1 cup diced tomatoes
- 1/2 teaspoon crushed fennel seeds
- 1/2 teaspoon crushed chili pepper flakes
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- Oil and Seasoning:
- 2 tablespoons olive oil
- Salt and pepper, to taste
- For Garnish:
- Fresh basil
- Shaved parmesan cheese
- Chopped scallions
Instructions
- Cook Pasta:
- Prepare pasta according to package instructions until al dente. Drain and set aside.
- Cook Sausages:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add sausages and cook until browned on all sides, adding ¼ cup water to prevent sticking.
- Once browned, remove sausages, slice into ¼–½-inch pieces, and set aside.
- Prepare the Sauce:
- In the same skillet, add the remaining tablespoon of olive oil. Sauté onions with fennel seeds, chili flakes, and Italian seasoning for about 2 minutes.
- Add minced garlic and ground tomatoes, stirring for 1–2 minutes.
- Mix in bell peppers and diced tomatoes. Cook until vegetables are tender.
- Add chicken broth and simmer for 1 minute. Season with salt and pepper to taste.
- Combine and Finish:
- Return sliced sausages to the skillet and stir into the sauce. Simmer for 5–10 minutes until the sausage is fully cooked and the sauce thickens.
- Add cooked pasta to the skillet, stirring gently to coat.
- Serve and Garnish:
- Garnish with fresh basil, scallions, and shaved parmesan cheese. Serve hot and enjoy!
