  • Pasta: 12 ounces penne pasta
  • Sausage: 1 pound Italian sausage
  • Vegetables and Aromatics:
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 bell pepper, diced
  • Sauce Ingredients:
    • 1 cup ground tomatoes
    • 1 cup diced tomatoes
    • 1/2 teaspoon crushed fennel seeds
    • 1/2 teaspoon crushed chili pepper flakes
    • 1 teaspoon Italian seasoning
    • 1/2 cup chicken broth
  • Oil and Seasoning:
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
  • For Garnish:
    • Fresh basil
    • Shaved parmesan cheese
    • Chopped scallions

Instructions

  1. Cook Pasta:
    • Prepare pasta according to package instructions until al dente. Drain and set aside.
  2. Cook Sausages:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add sausages and cook until browned on all sides, adding ¼ cup water to prevent sticking.
    • Once browned, remove sausages, slice into ¼–½-inch pieces, and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the remaining tablespoon of olive oil. Sauté onions with fennel seeds, chili flakes, and Italian seasoning for about 2 minutes.
    • Add minced garlic and ground tomatoes, stirring for 1–2 minutes.
    • Mix in bell peppers and diced tomatoes. Cook until vegetables are tender.
    • Add chicken broth and simmer for 1 minute. Season with salt and pepper to taste.
  4. Combine and Finish:
    • Return sliced sausages to the skillet and stir into the sauce. Simmer for 5–10 minutes until the sausage is fully cooked and the sauce thickens.
    • Add cooked pasta to the skillet, stirring gently to coat.
  5. Serve and Garnish:
    • Garnish with fresh basil, scallions, and shaved parmesan cheese. Serve hot and enjoy!
