  • 6 cups fresh or frozen strawberries (sliced, about 3 pounds)
  • 1/41/3 cup honey
  • 1 tablespoon cornstarch
  • 3 tablespoons bourbon (optional)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat Oven:
    • Preheat the oven to 400°F.
  2. Prepare the Biscuits:
    • In a food processor, combine flour, baking powder, salt, and butter. Pulse until the mixture forms pea-sized clumps.
    • Drizzle in the buttermilk and mix until the dough is “shaggy.”
    • On a floured surface, pat the dough into a 1-inch-thick square. Cut into four pieces and layer cream cheese between three of them, stacking. Flatten the stack, roll into a rectangle, and cut into 12 biscuits.
    • Place biscuits on a parchment-lined baking sheet and freeze for 10 minutes.
  3. Cook the Strawberries:
    • In an oven-safe skillet, combine half the strawberries and honey. Cook over high heat for 5–10 minutes until the juices are bubbling.
    • Remove from heat and mix in the remaining strawberries, cornstarch, bourbon (if using), lemon juice, and vanilla.
  4. Assemble and Bake:
    • Brush the biscuits with melted butter and sprinkle with coarse sugar. Arrange the biscuits over the strawberry mixture in the skillet.
    • Place the skillet on a baking sheet and bake for 35–40 minutes until the biscuits are golden.
