Scale
- For the Chicken:
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 teaspoons kosher salt
- 2 tablespoons extra-virgin olive oil
- For the Sauce:
- 4 cloves garlic, finely minced
- 3 tablespoons salted butter
- 2 tablespoons all-purpose flour
- 3/4 cup chicken stock
- 1 1/4 cups whole milk
- 4 ounces cream cheese, softened
- For the Vegetables and Garnish:
- 2 cups spinach, roughly chopped
- 1/4 cup fresh basil, finely chopped (or 2 teaspoons dried basil)
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1/2 cup freshly grated Parmesan cheese (plus extra for garnish)
- Freshly cracked black pepper
- Optional:
- Crusty bread for serving
Instructions
- Prepare the Chicken:
- Season the chicken breasts with 1 teaspoon of kosher salt.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook, covered, for 6–8 minutes per side until the internal temperature reaches 165°F. Remove and let rest on a cutting board.
- Sauté Garlic:
- In the same skillet, heat the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
- Create the Roux:
- Add the butter to the skillet and stir until melted. Sprinkle in the flour and stir continuously for about 1 minute until the mixture turns golden.
- Assemble the Sauce:
- Gradually whisk in chicken stock, then add milk and cream cheese. Whisk until the sauce is smooth and begins to thicken, about 2–3 minutes.
- Add Vegetables and Cheese:
- Stir in spinach, basil, chopped artichoke hearts, and the remaining teaspoon of salt. Cook until the spinach wilts and the artichokes are warmed through, about 4–5 minutes. Stir in Parmesan cheese until melted and incorporated.
- Combine and Serve:
- Return the cooked chicken to the skillet, ensuring it is well-coated with the sauce. Sprinkle additional Parmesan cheese and cracked black pepper over the top.
- Serve with crusty bread or your favorite side dish.
