- 3/4 cup chopped fresh strawberries
For the Icing:
- 1 cup (115g) powdered sugar, sifted
- 2 teaspoons corn syrup
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons (15-30ml) milk
For the Whipped Cream:
- 1/2 cup (120ml) heavy whipping cream, cold
- 2 tablespoons (15g) powdered sugar
- 1/4 teaspoon vanilla extract
Directions
- Prepare the Puff Pastry:
- Preheat the oven to 400°F (200°C).
- Unfold the puff pastry sheets and cut each into 3 equal strips, totaling 6 strips.
- Place the strips on a baking sheet and bake for about 13 minutes, or until golden brown.
- Remove from the oven and allow to cool. If needed, gently press the baked pastry to flatten the layers slightly.
- Prepare the Pastry Cream:
- In a medium bowl, whisk together the egg yolks, sugar, and cornstarch until well combined.
- In a saucepan over medium heat, bring the milk to a simmer.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
